As much as i would love to give the pan a 5 star rating i have one great concern. The handle gets really hot. I have several other carbon steel pans, cast iron pans and stainless steel pans. None of which do the handles get really hot. I have tough hands when it comes to hot things, i have been cooking over 40 years. Other than that i love the pan.

So far so good, after doing a potato-skin seasoning, the pan is developing a nice patina/coating. One point of disappointment though, the handle on this pan is coated. De Buyer in an email reply (timely I will add) limited the time and temperature the pan could be in an oven, no more than 15-minutes (if my recollection is correct) and no heat above 400°. I might have missed it, but it should be made clear in the description. I can't understand why this coating (an extra task/cost in manufacturing) when it limits the usefulness. I like the pan, I'll keep it, but had I known, I would have shopped elsewhere.

Just received my skillet. It is my first carbon steel and love the design. So far, not issues with food sticking. I am confident this positive vibe will only get better.
Pan arrived damaged. The expoxy coated handle had a number of chips. The bottom of the pan was also scuffed, likely because it was stacked with other pans.
